They were scrawled in my dad’s cursive handwriting, strong strokes, elegant lines, t’s crossed, i’s dotted, a large clear message. It was written on a birthday card dad gave me before I moved to the USA.

I mentioned before, when I was packing to move to the States, my dad reluctantly let me go. He worried about my well-being, and he warned I would have it hard, seeing I had two small sons to raise in what he said was a “foreign country.” As a parent, I now understand how he felt to see me go. It would have been painful for him to see me off at the airport. So perhaps it was a blessing he never had to. You see, this was the last birthday card he gave me. My dad passed away before I left for the States. In hindsight , it was meant for dad not to feel that pain. I was the one who got to say goodbye first.

Though I didn’t know it would be the last few conversations we would have, I assured my dad I would be fine because mom taught me how to cook. This time I was right.

Something nudged me to go scrounge around my desk drawer, while looking for stamps and an envelope. I found dad’s birthday card to me. The rush of memories of dad, mom, my childhood in the Philippines came back. With the poignant thoughts came the tears, a slow trickle streaming down my cheeks, the pang of sadness gripping my heart.

“I’m fine, dad, I told you I’ll be fine… I’ve cooked mom’s meals every single day,” I whispered softly, as I carefully kept his birthday card back in my desk.

I did as you told me to, dad …my family has always come first. They always will.

Beef Barbecue with Lemon-Pepper Oil

My dad would have loved these Beef Barbecue Skewers with Lemon-Pepper Oil I grilled for our family. The aroma from the citrusy-soy sauce glaze floated around the patio. To keep the beef tender and moist, I marinated it the night before. While grilling, I kept on brushing a glaze mixture with my new secret ingredient Boyajian Lemon-Pepper Oil along with soy sauce, garlic, ginger ale. It was a simple, yet magnificent char-grilled entrée. I’m making these for Father’s Day and I know it will be perfect. This is an AsianInAmericamag recipe. Serves 4.

Equipment

Ingredients

  • 2 pounds beef sirloin, tenderloin or skirt steak sliced in 1-inch strips
  • 1/4 teaspoon Boyajian lemon pepper oil
  • 1/4 cup soy sauce
  • 2 Tablespoons ketchup
  • 2 cloves garlic minced
  • 1 can (12 oz) ginger ale
  • 1 teaspoon salt
  • 2 Tablespoons brown sugar
  • 1 whole red or green bell pepper seeded, sliced in 1-inch strips
  • 12 to 14 pieces bamboo barbecue skewers pre-soaked in water for 30 minutes
  • for serving: steamed rice

Instructions

  • To marinate the beef: In a medium-sized bowl combine the marinade ingredients - lemon-pepper oil, soy sauce,ketchup, minced garlic, sea salt, ginger ale. Pour over the beef slices and blend well. Keep the marinated beef in a resealable plastic bag and refrigerate at least 6 hours or overnight.
  • The next day, prepare to grill by soaking the bamboo skewers in water for at least 20 minutes.
  • To cook the beef barbecue: Skewer the barbecue slices, about 4 pieces per stick. Alternately, skewer pieces of red or green bell peppers.
  • Pre-heat the grill to a medium high.
  • Use the leftover marinade and add the brown sugar. Or if desired, prepare a separate glaze mixture to brush on the beef skewers while grilling. Mix together the lemon pepper oil, soy sauce, ketchup, ginger ale, brown sugar,salt. This should make at least 1 cup of marinade to brush on the beef.
  • Place the beef skewers in the center of the pre-heated grill. Brush the glaze every 15 to 20 minutes. Cook till well done for about 18 to 20 minutes.
  • Serve warm with rice.
  • Cook’s comments: The Boyajian Lemon Pepper Oil was part of complementary mini boxed sets given to me. Boyajian Oils are used by home cooks and professional chefs for cooking and baking. They are all natural citrus oils, flavorings and extracts. This ingredient added a new dimension to the flavors of my cooking.

The flavors are intense and only a quarter to half a teaspoon are needed for each recipe. Boyajian products are available online or at retail stores.
