My newest cookbook My Mother’s Philippine Recipes is a collection of classic dishes which my late mom, Lulu Reyes Besa cooked for family and friends when they stopped by our home in Tarlac, Philippines. I remember these recipes of my childhood so well and how my mom lovingly cooked them, with most of the ingredients grown by my dad in our farm and backyard. Today, I found a way to transform these traditional Philippine dishes to everyday cooking in my American kitchen using ingredients from local markets and supermarkets nearby. Like most Filipino-Americans, I live in suburban America, far from the city or Chinatown. I have very little access to Asian produce and ingredients. To get them, I have to drive 50 to 60 miles to the closest Asian grocery. But through years of feeding my family here in America, I found ways to substitute ingredients without losing the soul and spirit of Filipino cooking. You will find that in my cookbooks.
